Hello! I’m back with a baby… a perfect little girl, Nora Mae, born on July 6th. You should know that she is already an excellent eater, weighing 11 pounds, 4 ounces (95th percentile) at her one-month doctor visit. I have obviously not cooked much in the last couple of months, because feeding Nora is like a full-time job. Just recently did I start to wrap my head around the idea of how people do things like laundry and get food on the table while parenting. So, I decided that since I have been able to accomplish daily showers (most of the time), occasional loads of laundry, and handful of homemade meals while taking care of Nora, I can do anything. Right?
So it’s back to work next month. Here’s the latest:

Peach Spritzer
Serves 6
4 peaches – peeled, rough chop
1 cup water
2 limes – juiced
1 cup simple syrup (1 cup water, 1 cup sugar heated until the sugar dissolves – chill)
1 (750 ML) bottle sparkling water
Puree peaches and water in a blender. Combine ingredients in a large pitcher. Add a generous amount of ice. Serve with lime wedge.
