My (royal) breakfast: Oatmeal pancakes

Oatmeal Pancakes
adapted from: Good to the Grain by Kim Boyce
Serves 6 people
3/4 cup oat flour (purchase at Whole Foods)
1 cup AP flour
2 TBS sugar
2 tsp baking powder
3/4 tsp kosher salt
–
3 TBS unsalted butter, melted and slightly cooled
1 1/2 cups whole milk or 2 %
1 cup cooked oatmeal (1 cup of oats + 2 cups water heated until cooked)
1 TBS real maple syrup
2 eggs
vegetable oil and butter
Mix all of the dry ingredients in one bowl and the wet ingredients in another. Gently fold the wet ingredients into the dry. Using a stainless steal pan (the book suggest cast iron) heat over medium high with a thin layer of vegetable oil. Once hot, add the butter and pour in the pancakes. Turn the heat down to medium. The key is to get thin pancakes (add more milk if the first batch is too fluffy) that have a lip (see photo). Once bubbles form on the top, flip the pancakes. Cook for another minute or so. Serve with real maple syrup and fruit (if available). It is best to use this batter right away. *No one can make pancakes like my dad, but these are so close!

I keep saying to myself….I need to get the Good to the Grain book. Every single blogger and foodie out there is talking about it. I still can’t seem to nail my pancake recipe. I think I have problems with consistency of my batter.
On a royal wedding note, I provided cucumber and goat cheese sandwiches to my viewing party. We didn’t do ours at 3m….did it at 7pm instead.
Emily – You will LOVE Good to the Grain! I highly recommend it. And as far as pancakes go, I always need to add more milk, I think that most pancakes are too fluffy. Also a nice hot pan w/ oil + butter.
ooh, those are perfectly-edged, dadlike pancakes. Thx for the thinning tip, I’m going to try it next time I make these (tomorrow?)
