What to do with those radishes

It’s time to get serious about radishes. If you want to know what to do with them, I’d suggest this salad. I found it on the blog Sassy Radish and ate it three days in a row, two weeks ago (I attribute my tardiness to a computer breakdown, vacation, and a really cool first birthday party, more that in a bit). It is quite delicious, not to mention crisp, peppery, and creamy. Olga urged us to make it just as she stated, but I had to omit the dill (sorry, Olga). But if you love dill, by all means.

Cucumber Radish Salad

8 cups arugula, roughly chopped

3 persian cucumbers – sliced

5 radishes – sliced thin ( I used a mandolin)

2 scallions – chopped

3-4 TBS sour cream

1/2 teaspoon salt, plus more to taste

fresh cracked pepper

In a large bowl toss the vegetables, then add the sour cream & season.
