1 1/2 sticks unsalted butter - room temperature - plus more for pan
2 cups flour
2 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1 1/4 cups sugar
3 ripe bananas - mashed
1 cup chopped walnuts
Preheat oven to 350 F. Butter a 9-by-5-by-3-inch loaf pan and set aside. Whisk together the flour, baking powder, salt, and baking soda.
Then in a bowl with a mixer or with a stand mixer, cream the butter and sugar until light and fluffy. Then add the eggs one at a time, scraping down the sides of the bowl periodically. Alternate adding the flour mixture and the bananas in 3 parts. Once blended add the walnuts and mix until just combined.
Add the batter to the loaf pan. Bake for ~70 minutes or until a toothpick comes out clean. Let cool for 10 minutes. Use a butter knife to loosen the bread and then turn out onto a cooling rack and let the bread cool completely.
