There was broccoli in those hills I tell ya. I just returned from Phelps, Kentucky. I was there with a group of high school students to build a house with Habitat for Humanity (more on this topic next blog post).
We lived in what the locals called a “holler,” better known as a “valley” up north. While in the holler we looked upon the sloping mountains. The trees cascade down the peak’s side in taut green bunches. I am not sure if the heat/humidity combination got to my head, or what, but all I saw was broccoli. Divine vision or not, I knew what I was making the first night back.
Broccoli Heat
A recipe from Abby
2 heads of broccoli – small florets
1 large clove of garlic – minced
extra virgin olive oil
red pepper flakes
salt and pepper
Preheat the oven to 400. Place the broccoli on a cookie sheet—spread out. Drizzle a small amount of olive oil over the broccoli; season with salt, pepper, and place in oven. Meanwhile, coat a small saucepan with olive oil, heat—add garlic and red pepper flakes. Cook until the garlic is aromatic. After the broccoli has cooked for 5 minutes add the garlic and red pepper flakes. Cook for another 5-7 minutes.
