CKT has been busy making frosted shortbread cookies!
As the story goes…
My grandma used to have tea every afternoon with her neighbors in St. Catherines, Ontario. Every friend would bring their “specialty” dessert to share. (And as my mom tells me, their block was like a “mini United Nations.”) Their neighbor from Scotland brought the most delicious and decadent shortbread; she gave the recipe to my grandma who started rolling the dough out to make cut-out frosted cookies. When my grandparents returned back to the states, my grandma would send my mom to school with armfuls of the cookies for holidays and birthdays. My mom’s schoolmates loved them so much that it became a tradition.
Then came the day when my mom started making the cookies for my brothers and I when we were kids. The cookie became famous! All of our friends would order them for special occasions…our house would be covered in cookies. My mom started to sell them at the local bakery and named them after me–Sweet Caroline’s.
Now I am making the cookies and hope you enjoy them as much as our family & friends. It’s a simple recipe made with love.
