caroline's kitchen table - chili rubbed salmon

CKT Chili Rubbed Salmon
Recipe note: EASY
serves 4

olive oil
4, 6 oz salmon fillets; I use Scottish salmon
3 tsp cumin
3 tsp chili powder
s & p
lemon

Preheat the oven to 425 F. Combine the cumin and chili powder. Dust the top of each salmon fillet with the mixture. Heat a large cast iron skillet over medium hugh heat. Coat the pan with olive oil and let it get hot. add the salmon, skin side up. Cook for 5 minutes, then flip over and place pan in the oven and cook for 6-7 minutes. The salmon should be tender, yet firm. It should almost feel like the tip of your nose. ;)
