Recipe Note: EASY
A recipe from Pat, my mother-in-law, serves 6-8
1 1/4 cup graham cracker crumbs
3 TBS sugar
1/3 cup butter - melted
3 TBS cocoa powder - I used Ghirardelli
4 TBS flour
1 cup sugar
2 eggs - lightly beaten
1 tsp vanilla
1/2 cup butter - melted
For the crust: Preheat oven to 350 F. Combine the crumbs and sugar in a mixing bow. Stir in the melted butter and combine with hands. Press crust into a 9-inch pie pan. Make sure the crust covers the pan and the sides. Bake for 8 minutes. Allow to cool.
Lower heat of oven to 325 F. Combine the cocoa powder (measured and then sifted), flour, & sugar. Then add the eggs, and vanilla (with a whisk). Slowly (while whisking) add the butter; mix well to combine. Pour into pie crust. Bake for 35-45 minutes; until a toothpick comes out clean. Cool for 15 minutes. Dust with powdered sugar (using a sieve). Cut and serve.
