CKT Cauliflower Tacos
Recipe Note: Easy
1-2 TBS olive oil
2 heads of cauliflower - chopped
kosher salt & fresh ground pepper
1 tsp chili powder
cashew cream + a handful of cilantro
cilantro - roughly chopped
Ahead of time make the cashew cream with the addition of a handful of cilantro.
Preheat oven to 350 F. In a large cast iron pan, heat the olive oil over medium to high heat. Once hot, add the cauliflower and season with salt and pepper. Cook for approximately 10 minutes, stirring frequently. You want the cauliflower to be charred and tender, yet firm. Finally season with the chili powder and let rest in the pan.
Place a stack of tortillas wrapped in foil in the oven and heat until warm.
Serve with the cashew cream, cheese, salsa, and cilantro.
