CKT Oatmeal Chocolate Chip Peanut Butter Bars

1/2 cup butter - softened
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg, beaten
1 tsp vanilla extract
1/2 cup flour
1 cup quick-cooking oats
1 tsp baking soda
1/4 tsp salt
1 cup semisweet chocolate chips

Preheat oven to 350 F. In a medium bowl combine the flour, oats, baking soda and salt-set aside. Then in the bowl of an electric mixer, cream together the butter, sugars and peanut butter with the paddle attachment. Add the egg and vanilla; mix until combined. Stir the flour mixture into the butter mixture. Spread the dough into a 9x9-inch parchment-lined baking dish. Sprinkle with chocolate chips (push in). Bake at 350° for ~25 minutes or until lightly browned. Allow to cool for 10 minutes-then cut. Once completely cooled, store in a ziplock bag or cookie tin for up to 3 days.
