CKT Lemon Honey Kale
serves 4 (as a side)

2 TBS olive oil
1 bunch of kale -ribs removed and roughly chopped
generous kosher salt and fresh cracked pepper
1/2 lemon juiced
honey to taste - just a drizzle
In a hot (very hot!) cast iron pan, add the olive oil. Then add the kale (it will crackle in the pan). Stir gently and cook for a few minutes until the kale is somewhat charred yet still bright . Season with kosher salt, fresh cracked pepper, lemon, and a touch of honey.
