CKT Peanut Butter Balls

CKT Peanut Butter Balls
makes 30-40 balls

2 cups peanut butter
1/2 cup butter (1 stick) - room temperature
2 1/2 cups powdered sugar
6 cups Rice Krispies
1 package crushed pecans (Trader Joe's)
1 (11.5 oz.) bag of semi-sweet chocolate chips
sea salt or kosher salt for dusting

Mix the peanut butter, butter, and powdered sugar. Once combined, add the Rice Krispies. Form into balls, then chill on a cookie sheet in the refrigerator. Meanwhile melt the chocolate in the microwave or in a double broiler. Using two spoons or long skewers, dip each ball in chocolate and allow to cool on a cookie sheet. Dust with sea salt (or kosher salt). Store in fridge until ready to use.
