Recipe note: EASY
adapted from Plenty, serves 6 as an appetizer,
1/2 tsp fennel seeds
1 lemon - juiced and zested
handful of basil leaves - finely chopped
1 sprig of fresh oregano leaves - finely chopped
1 garlic clove - minced
2 - 3 TBS olive oil (or taste)
1/2++ tsp salt
fresh ground pepper
3 ripe tomatoes - roughly chopped
3/4 pound fresh buffalo mozzarella - torn by hand
Place fennel seeds in a small fry pan, toast until they pop. Roughly chop the seeds. Make the marinade (all ingredients until the break)--vigorously stir. Combine the marinate with mozzarella and the tomatoes 20 minutes before serving.
This is great on a toasted baguette or tossed in with a simple green salad.
