CKT Salsa Chicken
Recipe Note: EASY
1 1/2 pounds boneless skinless chicken thighs
1 1/2 cups (your favorite) salsa - I recommend picking it up from your favorite taco stand in the neighborhood

Preheat oven to 275 F. Then heat a large dutch oven over medium heat and coat the bottom of the pan with a small amount of olive oil. Once hot, brown the chicken thighs on each side (approximately 3-4 minutes). Once browned, pour in the salsa. Make sure all of the chicken is covered and place in the oven to cook for 2 hours (flipping the chicken halfway through). Once finished, use two forks to shred the chicken in the sauce--use for tacos, rice bowls, or sandwiches.
