Swiss Chard Risotto Soup
Recipe Note: EASY
serves 6

1/4 cup butter
1/4 cup yellow onion - medium dice
2 bunches swiss chard - 1/2 inch strips
6 to 7 cups chicken stock
3/4 cup arborio rice
1/2 cup parmesan cheese

In a stockpot, melt the butter over medium heat. Add the onions and cook until translucent. Add the chard; cook and cover for 4-5 minutes. Add the chicken stock bring to a boil and add the arborio rice. Cover and cook for 20 minutes or until the rice is cooked. If the soup is too thick, add more stock. Add the parmesan cheese and season with s and p. Garnish with additional parmesan cheese.
